  • 1 cup - milk
  • 1 cup - buttermilk
  • 1 cup - hot sauce
  • 2 cups - self-rising flour
  • 1/4 cup - self-rising cornmeal
  • 2 tablespoons - course ground black pepper
  • 3 tablespoons - salt
  • 2 pounds - medium shrimp, peeled and devained with tails left on
  • peanut oil for frying
  1. Heat peanut oil in a large pot to 375 F. A cast iron Dutch oven works best.
  2. Whisk together milk, buttermilk and hot sauce in a shallow dish while the oil is heating.
  3. Whisk together flour, cornmeal, salt and pepper in a separate shallow dish.
  4. Dredge each shrimp in the dry mixture, then the wet mixture and then in the dry mixture again. Shake gently between dredgings to remove excess ingredients.
  5. Deep-fry shrimp for 2 minutes in small batches to avoid over-loading the fry pan. Cooking too many shrimp at once results in soggy breading.
  6. When the shrimp are done, remove them from the oil and drain them on a paper towel.
  7. Serve fried shrimp warm with seasoned fries or dirty rice. Like most small shrimp recipes, Southern style friend shrimp is a great casual meal for cookouts and family get-togethers
