Fish and Lemon Cocktail
Ingredients (serves 4)
2 large lemons
100 g (4 oz) shelled prawns, thawed if frozen
95 g (4 oz) can crab meat
15 g (½ oz) seedless green grapes, halved
1 tbsp mayonnaise
½ tbsp dill freshly chopped
dill and salad leaves to garnish
- Cut the lemons in half lengthways. Cut the flesh from each half, discarding the membranes and pips.
- Place the flesh in a bowl with the prawns, crab meat and grapes. When ready to serve mix in the mayonnaise and dill. Stir well. Note: Do not mix the fish with the mayonnaise until ready to serve, otherwise juice from the lemon will separate the mixture.
- Spoon the filling into the lemon shells and serve garnished with dill and salad leaves
